Plenty of surf houses on this coast are run from a laptop. hyle is run from the kitchen, the rooftop and the water — by Simo, a local from Anza and a passionate surfer who grew up here, together with his mother, whose cooking has a fan club of its own among guests.

Simo teaches guests in the water at Anza, and he doesn’t coach from memory: he brings a photographer along, so after the session you review your own photos and video together — feedback you can see, not just hear.

The second half of the hyle duo is Simo’s mum. Her three-course Moroccan dinners — ordered in advance, paid separately, devoured communally — turn a guesthouse into a home. The long conversations those dinners start are what guests remember most.
